Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius) and grease an 8 x 8 inch baking dish.

Mix the grated Pecorino and the breadcrumbs in a small bowl; set aside.

Bring a large pot of salted water to the boil. Add the Ziti and cook with a bite until tender, about 11 minutes. Drain; reserve about 2 tablespoons of pasta water.

Meanwhile, melt the butter in a large non-stick frying pan over medium heat. Add The chopped onion; cook and stir until the onion softens, 2 to 3 minutes. Stir in the garlic, herb spices and red pepper flakes and cook for about 30 seconds.

Turn off the heating. Stir in the chicken, spinach, heavy cream, Boursin and Mozzarella until the cheese is melted and the ingredients are well mixed.

Stir the drained Ziti into the chicken mixture. Dissolve the Sauce with the reserved pasta water if necessary. Pour the chicken and sauce mixture into the prepared baking dish. Sprinkle the Pecorino-breadcrumb mixture on top.
